The Gabled Cottage and Loft
About an hour north of Victoria lies the coastal town of Crofton, which once played host to a street dentist styling himself “Painless” Parker. He built a dock and perched a dentist’s chair at the end for open-air tooth pullings. Today, that dock borders the Gabled Cottage and Loft, a shingled A-frame house surrounded by gardens and spectacular views of Osborne Bay. Inside, white wainscoting, oil paintings, and crackling fireplaces create a sophisticated setting. Four bedrooms inhabit the house, including a master suite with French doors that open onto a slate-tiled deck. The carriage house next door holds The Loft, a shabby-chic hideaway draped in white linens.
During their stays, guests can join chef Zac Zorisky as he leads a three-course [cooking class], crafting local farm fare into dishes such as sautéed clams, fettuccine with prosciutto, and tea-flavoured crème brûlée. After dinner, visitors savour views of yachts and tugboats navigating the bay as blue herons, sea lions, and otters hold meetings of their model U.N. in the shallows. When it comes time to explore, the neighbouring seaside villages of Chemainus and Duncan harbour musicals and First Nations craft galleries, respectively. Guests can also hop aboard the Salt Spring Island ferry to peep at celebrity summer homes.
